Yogurt - Did you know?

Greek Yogurt: Greek yogurt has been made in Greece since time immemorial, and was called "oxygala" or "pyriati" (sour-milk or freshly boiled milk), and later "ygeiartos" (healthy dessert). Yogurt is perhaps one of the first 'processed' foods that humans ever tried, even before making cheese.

 

In ancient Greece it was consumed with honey and walnuts, just like today. The very term "honey moon" derives from the practice of Spartans to eat yogurt with honey, walnuts and almonds for an entire month on the first moon of January after their wedding on Mt Taygetos.

 

Sandorini yogurts and sour creams are made using traditional Greek or Mediterranean processes, and 100% Canadian milk!

    Sandorini Feta Chlorotyri, is an all-natural white cheese with a mildly salty, tangy flavor. Feta cheese with a creamy, soft, texture and high protein content. Use in your salads or chosen recipes and favorite dishes. It is a unique Feta cheese that you will love, produced with our trade secret!

     

    Traditionally, Chlorotyri Feta cheese is the prime, freshest first batch of the Feta cheese process, and is given to the bride from her mother on the famous Santorini Island. It is one of the most difficult Feta Cheese varieties to make correctly, but has a great mild taste and is very nutritious.

Cheese-making - Did you know?

Cheese-making: Some of the oldest cheeses in the world are made in Greece. As early as the 8th century BCE, Homer described Chlorotyri Feta, made using fresh, thermized milk with Greek yogurt as the starter. This technology remains largely the basis for manufacturing most cheeses around the world from ancient times until today.

 

Various cheese types evolved throughout the centuries with unique traditions and tightly kept secrets of different cheesemaking processes handed down generation to generation. Each cheesemaking process we use has the same starting point: excellent taste, great nutritional value, made using traditional recipes, with 100% Canadian milk!

Tzatziki - Did you know?

Tzatziki: Dips or dipping sauces are the most common condiments from ancient times till present. In ancient Greece, Tzatziki was called "taratyri" (stirred yogurt and cheese), but they had other varieties too, such as "kandylos" (sweet tzatziki), "myttoto" (spicy tzatziki with bread bits), and "ekchytos" (a soup with wine, baked cheese, yogurt and spices). The practice likely began as Greeks kept cucumbers and seeds in sour milk and yogurt before planting them, to make them less sharp in taste.

 

Today, tzatziki is used in just about anything, either as a dip, on its own, or in recipes. Sandorini Tzatziki is made using the modern recipe with a touch of ancient secrets, and 100% Canadian milk!

Spanakopitta - Did you know?

Spanakopitta: A variety of pastries can be traced to antiquity in the Mediterranean region and ancient Greece. Spinach was not available or was not well known in the region, well until the Hellenistic times, but pies such as "Plakountas" (pastry or pie with milk, yogurt, cheese, fresh herbs, leeks, olive oil, and nuts), or "Mytlotos" (pie with cheese, honey, garlic, onions and fresh greens) were enjoyed almost daily.

 

Throughout the ages, cultural exchanges have created a vast array of recipes for pies and pastries, refined for hundreds of years, but the  Greek cheese pie ("Tyropitta") and spinach pie ("Spanakopitta") have become the most famous. We use a traditional recipe from Santorini Island.
